I grew up in a small Portuguese town in California. The Festa and bull fights were yearly events. I can still remember the smell of the beef with mint and sopping crusty bread being served at the City Hall building, free for all who attended. The lines stretched down two city blocks.

This recipe for Portuguese Bell Pepper Rice was taught to my mother by a neighbor when I was young. I grew up eating it as one of my favorite dishes. I in turn, made it for my family. It still being on of my favorite simple recipes.

When I adopted a plant based lifestyle, I had to give up many of my old favorites. However, with just a few tweaks, I can still have my old favorite. And it is just as good as I remember. To make this, you will need:
1 green bell pepper
1 red onion
4 C. cooked rice
2 C. cooked lentils
black pepper
onion powder
garlic powder
